In case you were not aware– I am not a fan of baking- and pretty much consider myself baking handicapped. I love to eat fresh baked just about anything! But for some reason, which I usually attribute to my dislike of Chemistry, baking and I have never really been good friends. Our relationship is like the loaf of bread that never rose or the middle of a cookie that sunk and stuck to the pan. So when it comes to birthdays I have to get resourceful…and as far as my son is concerned no need to go any further than this recipe.
First you need to take a trip to your local store and purchase:
Ice cream sandwiches (1 box for a small cake/2 for a large)
Cool Whip
Fudge sauce/ Carmel/ Butterscotch—whatever your heart desires..
Candy/ Candy Bars…again your discretion is advised…this time I used a miniature mixed bag of Twix, Milky Way, 3 Musketeers, Snickers…you get the drift
Directions:
I put my cake in a 13 x 9 glass dish- it is easier to store but you can start stack yours right on a plate if you wish to be more decorative.
Place 1 layer of ice cream sandwiches side by side.
Next put a layer of sauce- acts like glue to hold them- then some candy (I cut my miniature candy bars in half) followed by another layer of sandwiches. You can go higher – apparently 3 is pretty cool but 2 works just fine-
Top it off by covering the cake with cool whip and then decorate with more sauce and candy—throw it in the freezer until frozen (I made mine the day before- one less thing on the list:))
The last part is enjoying the smiles when they take their first bite.
Ta Da- no oven necessary!
Best Ice Cream Cake…Ever
Cheers and Enjoy!
